Encoded with `ffmpeg -i (...) -map 0 -vcodec libx265 -pix_fmt yuv420p10le -crf 21 -preset slow -acodec libvorbis -q:a 8 -c:s copy` and achieved a vmaf score of 97.578907 (virtually identical)

Virtuality's release is a *remux*, not an encode. The universe is "where people are paying for a blu-ray of the content", because that's the source. The bitrates are comparable to other anime blu-rays.

If you used Virtuality's release as a source, the English audio was 192 Kbps Dolby Digital. So it would appear you transcoded a lossy format into another lossy format, and increased the size on top of that.

if we lived in an ideal universe, we could be getting ProRes masters which clock in at ~30 GB per episode
If I wanted a Blu-ray, I'd download a BDMV folder. If I wanted a DVD, I'd download a DVD-ISO file. But people rarely upload those for some reason. I don't know what the point of remuxes are.
